The Villagers
During the summer, a few shepherds from the village collect animals from local farmers who own herds of up to 1,000 sheep and cows and head their flocks to pasture in the mountains. Using cow milk, to which sheep milk is added, the shepherds make "telemea", similar to Greek cheeses, preserved in brine.
The latter is the basis for "Brânzá de Burduf", the most valuable among Romanian cheeses and the most suitable for long conservation. According to ancient tradition, Brânzá de Burduf must be molded into a thin sheet of pine tree bark, wrapped around the cheese into a cylinder about 20-25
cm high and 10 cm wide. Both ends of the cylinder are sealed with bark discs. This is only a short description of the specialties that wait for you in Moeciu de Sus. There is more to show, experience and taste.
